Easy Turkey Chili

This Easy Chili recipe is very versatile and will please a hungry crowd without a lot of effort or fuss. Option 1: Change the protein to ground beef, chicken or sausage. Option 2: Simmer on low in Crockpot for several hours for even more simplicity.
Serve in a bowl with tortilla chips, cheese, salsa and sour cream.

Ingredients
  

  • 1 lb Ground Turkey
  • 1 cup Onion – chopped or diced
  • 1 medium Green Pepper – chopped or diced
  • 1 cup Zucchini – chopped
  • 1 cup Carrot – diced
  • 2 cloves Garlic – minced
  • 1 15 oz Pinto Beans
  • 1 15 oz Red Kidney Beans
  • 1 15 oz Black Beans
  • 1 16 oz Stewed Tomatoes with juice
  • 1 cup Salsa – mild or medium
  • 1 Tbsp Ground Cumin
  • 2 tsp Chili Powder
  • Optional Toppings: Tortilla chips Grated Cheese, Salsa, Sour Cream, Green Onions & Cilantro

Instructions
 

  • Brown Ground Turkey in pan over medium heat.
  • When Turkey is almost done, add onions, green peppers and garlic to pan and finish browning.
  • Next add Chopped Zucchini, Carrots, Pinto, Kidney and Black Beans. Stir well
  • Add Stewed Tomatoes, Salsa, Ground Cumin and Chili Powder. Stir well
  • Bring to a boil 2 minutes stirring well, then reduce heat to a simmer.
  • Continue to simmer for 30 minutes.

Notes

Crockpot Option:   After Browning Turkey with onion, garlic and green peppers, simply add meat/veggie mixture with the rest of ingredient list to crockpot and let simmer on low 4-6 hrs.  
Meat Option: Don’t have ground Turkey?  No worries.  Simply substitute the protein you have on hand for ground Turkey.  This Chili recipes is extremely versatile, with ingredients that compliment Ground Beef, Chicken or Sausage.
