Thai Peanut Chicken

Ingredients
  

  • 4 Boneless, skinless chicken breasts – cut into thinly sliced strips
  • 3 tbsp Olive Oil
  • 3 Garlic Cloves – Finely Chopped
  • 2 Ginger Root – Grated
  • 2 1/2 cups Brocolli Florets – Roughly Chopped
  • 3/4 cups Green Onions – Sliced thin
  • 1/3 cup Dry Roasted Salted Peanuts
  • 9 Tbsp Soy Sauce or Liquid Aminos
  • 6 Tbsp Peanut Butter
  • 6 tsp White Wine Vinegar
  • 1/4 tsp Cayenne Pepper optional
  • 4 cups Basmati or Jasmine Rice

Instructions
 

  • Cook Rice and keep warm
  • In medium sized bowl, mix together peanut butter, white wine vinegar, soy sauce and cayenne pepper (if using)
  • In Cast Iron Deep Pan or Wok heat Olive Oil on Medium High heat.
  • Add Chicken, Ginger, Garlic cloves
  • Cook, Stirring often for 5-6 minutes (chicken should be nearly cooked through)
  • When Chicken is near fully cooked, reduce heat to Medium and add broccoli, peanuts, green onions along with peanut butter sauce mixture to pan, stir to combine.
    (About 3-5 minutes cook time)
  • Continue to cook and stir until both Chicken and Broccoli are fully cooked and tender.
  • When contents of pan hot cooked throughout , serve Thai Chicken mixture over rice.
