Thai Peanut Chicken
Thai Peanut Chicken
Ingredients
- 4 Boneless, skinless chicken breasts – cut into thinly sliced strips
- 3 tbsp Olive Oil
- 3 Garlic Cloves – Finely Chopped
- 2 Ginger Root – Grated
- 2 1/2 cups Brocolli Florets – Roughly Chopped
- 3/4 cups Green Onions – Sliced thin
- 1/3 cup Dry Roasted Salted Peanuts
- 9 Tbsp Soy Sauce or Liquid Aminos
- 6 Tbsp Peanut Butter
- 6 tsp White Wine Vinegar
- 1/4 tsp Cayenne Pepper optional
- 4 cups Basmati or Jasmine Rice
Instructions
- Cook Rice and keep warm
- In medium sized bowl, mix together peanut butter, white wine vinegar, soy sauce and cayenne pepper (if using)
- In Cast Iron Deep Pan or Wok heat Olive Oil on Medium High heat.
- Add Chicken, Ginger, Garlic cloves
- Cook, Stirring often for 5-6 minutes (chicken should be nearly cooked through)
- When Chicken is near fully cooked, reduce heat to Medium and add broccoli, peanuts, green onions along with peanut butter sauce mixture to pan, stir to combine. (About 3-5 minutes cook time)
- Continue to cook and stir until both Chicken and Broccoli are fully cooked and tender.
- When contents of pan hot cooked throughout , serve Thai Chicken mixture over rice.
